Prof. Lijing Ke has 20 years of research and teaching experience in higher education academia. In his research, he demonstrated that self-organised nanoparticles are functional entities and bioactive carriers of compounds in traditional Chinese food and medicine, discovered a new way of food-body interrogation through nanoparticle-cell interactions in the gastrointestinal tract, and hypothesised a general redox regulation mechanism for the effects of food components on human health. His current research interests include investigating the nature and evolution of nanostructures in typical foods during processing, obtaining detailed information on the fate of natural food nanostructures in the gastrointestinal tract, as well as designing and developing multifunctional nano-assemblies that consolidate redox and immune regulatory capacities for healthier and more sustainable foods of the future. He is a senior member of the Chinese Institute of Food Science and Technology (CIFST) and an associate editor of the Science of Food journal.
